Naturally rich in polyphenols, particularly hydroxytyrosol, the olive oil produced by Atlas Olive Oils is of extraordinary quality. The harsh environment of the Moroccan desert, with its scorching summer temperatures, rocky soil, and limited water availability, causes the olive trees to undergo a "panic" response, leading them to produce a large quantity of antioxidants to survive. This results in the olive oil containing an exceptionally high hydroxytyrosol content.
Atlas Olive Oils' sustainable approach encompasses every aspect of its organic EVOO production process. The company's land in the Marrakech region, with its well-balanced soil composition, provides the ideal conditions for growing the right cultivars, including Picholine du Languedoc, Picholine Marocaine, Menara, Haouzia, Chemlali, and Dahbia in the older orchards, and Arbequina and Arbossana in the modern orchards.
The olive groves, spanning 245 hectares (605 acres) at an altitude of 390 meters above sea level, are managed using sustainable practices, such as pruning the trees into cups or hedges, and maintaining an optimal tree density. The resulting production of the old bicentenary orchard is 25,000 liters with a maximum acidity of 0.4% when bottled, while the modern orchard produces 450,000 liters with a maximum acidity of 0.2%.
Harvested from late September to late December, the olives are processed using a two-phase continuous system and extracted at a maximum temperature of 26°C, ensuring that the oil retains its exceptional quality and flavor profile. The resulting yield ranges from 11.5% to 15%.
Atlas Olive Oils' EVOO is available in various sizes, from 0.5 to 1 liter glass bottles, and is suitable for a wide range of culinary uses, from salads and meat to baking and desserts. The oil's aroma and taste profiles include notes of red tomato, ripe banana, apple, greenery, cut grass, almonds, basil, and sweet banana, making it a versatile and delicious choice for the discerning cook.
